SHOW NOTES

2016 Burger Trends:

  • Two extremes:
    • “Cronenburgers” are coming: Giant monster Burgers will become prevalent as the pressure to post outlandish Instagram photos builds.
    • Back to the basics: While some Burger will be going bigger and crazier, the purists will come out looking to get a Burger with Cheese and maybe one other topping.
  • Dry Aged Burgers: The nutty, funky, costly process of tenderizing and enhancing the flavor of beef by letting it desiccate naturally in a controlled environment.
  • Into the Grind: Bacon, cheese, peppers, and roast beef are all fair game to be ground right into your Burger patty to give it a unique flavor.
  • Smaller Patty, Bigger Sear: Restaurants will opt to serve two small patties over one large patty in order to deliver burgers to the table faster and provide more of that salty, delicious crust.
